Amaranth flour does not contain simple sugars, only complex sugars, which gives it a low glycemic index. Amaranth is a naturally gluten-free crop.
Amaranth is a plant also known as the weasel plant. Amaranth is considered one of the rarest plants. Compared to other cereals, it is a high quality and extremely rich source of protein.
It has a characteristic spicy taste, slightly pungent. It is therefore best not used on its own, but preferably in combination with other flours. This will ensure the excellent taste and quality of the resulting product.
The content of amaranth flour in the mixture should be a maximum of approx. 30%. Amaranth flour is particularly suitable for the preparation of unleavened breads.
